Garlic and Chilli Prawns

Another hot day with monty and Myf heading out for the evening.
It called for a quick and easy dinner.
Only one teensy, weensy problem. There was only one T-Bone left in the fridge, and I really, really fancied steak and salad.

Men’s Cooking Class Make a Boiled Fruit Cake

The fabulous Cat from Cathie Cooks Food posted this intriguing recipe for banana cake that I just had to bake straight away.

Cat’s recipe uses no butter or oil, although she said that a little oil was fine, if the cake baker wanted to add it and so I did put in a tablespoon of my special Camellia oil

Vietnamese Cold Rolls

The filling for these cold rolls was last night’s leftover rice noodle and salad. I defrosted some prawns and sliced them in half, long ways. In the past I have used shredded steamed chicken or pork in cold rolls. When Myf was a vegetarian I used pan fried firm tofu .

Vietnamese Style Chilli Prawn Salad

The hot weather called for something light and easy for dinner.
This “recipe” is flexible and forgiving as regards ingredients.
 Salad (lettuce, cucumber and coriander) is served with blanched rice noodle and asparagus, and topped with a quick stir-fry of chilli & garlic prawns.

This is the perfect summer dessert.
Light, sweet meringue, the outside light-as-air crispy, and the inside like puffy marshmallow, topped with whipped cream and the nicest selection of fresh fruits available to you.
